Hyperspace Bites! (Gluten-Free, Vegan Friendly)

In a galaxy far, far away…the recipe for Hyperspace Bites was born. Packed with nutrient-rich ingredients and a hint of sweetness, these bite-sized treats are as satisfying as they are wholesome. Toasted seeds and crunchy Key Lime Pie Granola is paired with rich matcha and pops of sweetness from white chocolate to bring you a galactically good treat for snack time or dessert!

What You’ll Need…

  • 2 ½ cups Key Lime Pie Granola
  • ¼ cup hemp seeds
  • ¼ cup ground pumpkin seeds
  • ¼ cup sunflower seeds
  • ½ cup honey or agave
  • ½ avocado or sunflower oil
  • ⅓  cup brown sugar
  • ¾  tablespoon matcha powder 
  • ¼ tsp fine sea salt 
  • ½ cup white chocolate chips (or dairy free dark chocolate chips)
  • Optional: ½ cup dried mixed fruits like raisins (golden or standard), pineapple, crystalized ginger, craisins, or cherries.

What You’ll Do…

  1. In a large dry pan, add the three varieties of seeds.Toast them over medium-low heat, stirring often. Remove from the heat and set aside while you prepare other things
  2. In a saucepan or large skillet, add honey, oil, sugar, matcha powder and salt. Turn on the stove over medium-low heat and stir until the oil melts and the mixture is well combined
  3. Add the toasted seeds and Key Lime Pie Granola and if adding, the dried fruit, into the pan and stir to combine. When the mixture is warm, add the white chocolate chips and combine (it will melt a bit). 
  4. Once the mix is cool enough to work with, begin rolling a palm size amount into bite-sized balls. Place on a parchment paper lined baking sheet. Make sure to firmly pack the balls so they maintain the shape and don’t crumble apart.
  5. Put the pan in the fridge for at least 1 hour to chill until it is firm. Once the Hyperspace Bites have been chilled for at least 1 hour, remove from the fridge and enjoy a bite or two! Store the Hyperspace Bites in an airtight container at room temperature for up to one week.
